Mild Heat

Mulato Isleño peppers are native to Puebla, Mexico. The heart-shaped, thick-fleshed fruit grows 4 to 6 inches long, maturing from deep green to chocolate brown and drying to a soft blackish brown. Well-branched plants produce generous clusters of fruit. Their complex flavor offers notes of raisin, cocoa, dried cherry, plum, coffee, and licorice, followed by mellow, warm heat. Along with Ancho and Pasilla Bajio chiles, Mulato Isleño forms the famous “holy trinity” used to prepare authentic deep-brown mole poblano. The fruit also adds depth to birria stew, adobo sauce, soups, marinades, enchiladas, tacos, chili, sauces, and barbecue rubs. Because of its naturally sweet cocoa and licorice undertones, dried Mulato Isleño can also be grated into a fine dust and added to desserts such as chocolate cake, truffles, and ice cream. Heirloom.

Did you know? Humidity can reduce the viability of pepper seeds over time, causing  seeds to stagnate. That’s why every seed pack includes a silica gel packet to help keep the seeds dry and fresh. To save seeds for next year, place the seed packet and silica gel packet together in a quart-size freezer bag, seal it, and store it in the refrigerator. Do not freeze.
