Cambuchi
Medium Heat
Cambuchi peppers are native to Brazil and produce three-sided fruit about 1.5 inches long and 3 inches wide. Often mistaken for Bishop’s Cap pepper, Cambuchi is milder than its cousin and has a sweet, fruity, slightly tangy flavor with a crisp texture. The wings are especially sweet, while the thicker body adds a pleasant kick of heat that builds quickly on the tongue. Use them fresh in salads, stuffed, pickled, made into salsa or jam, or dried and ground for spice. Green fruit will be milder, while fully ripe fruit will be spicier. Also known as Ubatuba or Brazilian Orchid pepper. Heirloom.

Did you know? Humidity can reduce the viability of pepper seeds over time, causing seeds to stagnate. That’s why every seed pack includes a silica gel packet to help keep the seeds dry and fresh. To save seeds for next year, place the seed packet and silica gel packet together in a quart-size freezer bag, seal it, and store it in the refrigerator. Do not freeze.
