Developed by the University of New Mexico, NuMex Big Jim plants produce long, thick-fleshed peppers that can exceed 12 inches and weigh more than 4 ounces, sometimes reaching past 14 inches and weighing up to 8 ounces. They are commercially recognized as the largest hot pepper, prized for their sweet, smoky, earthy flavor and mild, lingering warmth. The fruit is usually harvested green and are excellent fresh, roasted, grilled, stuffed, or used for classic chiles rellenos. A staple in New Mexican, Tex-Mex, and Southwestern cuisines. Each plant can produce up to 40 peppers. Heirloom.

25 seeds

Did you know? Humidity can reduce the viability of pepper seeds over time, causing  seeds to stagnate. That’s why every seed pack includes a silica gel packet to help keep the seeds dry and fresh. To save seeds for next year, place the seed packet and silica gel packet together in a quart-size freezer bag, seal it, and store it in the refrigerator. Do not freeze.
