Tabasco peppers are named for the southern Mexican state near Guatemala, where the variety originated, and are now grown in many regions worldwide. The small, 1-inch fruit has a juicy, sweet, fruity, slightly smoky flavor with fiery heat. Green fruit is grassy with faint fruitiness, while red ripe fruit develops sweeter, tangier notes. Cooking or roasting deepens the flavor, adding caramelized sweetness and smokiness. Tabasco peppers are famously fermented for New Orleans-style Tabasco pepper sauce, where the mash is aged in white oak barrels for about three years to mellow the heat and develop a tangy, woody, savory flavor dominated by vinegar. Popular in Cajun and Creole cuisines. Heirloom.

  • Heat: Hot (30,000 - 50,000 SHU)
  • Height: 18 - 24in
  • Harvest: 80 - 90 days from transplant

Did you know? Humidity can reduce the viability of pepper seeds over time, causing  seeds to stagnate. That’s why every seed pack includes a silica gel packet to help keep the seeds dry and fresh. To save seeds for next year, place the seed packet and silica gel packet together in a quart-size freezer bag, seal it, and store it in the refrigerator. Do not freeze.
