They are usually harvested green at about 2 inches long, when their flavor is grassy, nutty, lightly sweet, and mildly warming. Larger or red fruit can be hotter. About one in ten peppers is noticeably spicier, with heat comparable to a Jalapeño. This unpredictability inspired “Spanish Roulette,” a playful tasting game in which friends sample the peppers to see who gets the hotter one. Traditionally prepared as pimientos de Padrón, where they are pan-fried whole in olive oil until blistered, then finished with coarse sea salt. Enjoy them fresh, stuffed, sautéed, or pickled; red ripe fruit can also be dried and ground for spice.
